University of Sheffield Uses AI and Darwinian Evolution to Develop Sustainable Proteins
greenqueen.com.hkResearchers at the University of Sheffield are pairing AI with directed evolution to speed up development of precision-fermented proteins and other sustainable food ingredients. The team applies selective pressure in automated fermenters to identify microbial strains that can produce dairy proteins, animal fats, and other ingredients at scale without livestock. Work also targets Rubisco, the most abundant protein on Earth, extracting it from crop leaves and farm waste. Partners include Unilever, Mars, and NAPIC, with a focus on making alternative proteins cost-competitive and scalable. The research addresses both emissions from conventional farming and the nutrition gap between overconsumption and malnutrition.
