Skagway Brewing Company Turns Beer Fermentation CO2 Into Lettuce for Its Alaska Restaurant
thebusinessdownload.comSkagway Brewing Company in Alaska pipes carbon dioxide from beer fermentation up to an aeroponic farm called Raven's Nest, where it helps grow lettuce and herbs for the restaurant. The farm produces about 250 pounds of lettuce a week, enough to cover the brewpub's full demand. Leftover yeast goes into compost teas, cutting fertilizer purchases. The setup grew out of a supply problem. Skagway relies on weekly barges, and delicate greens often spoiled before arrival. Growing in-house costs about 10% more than shipping greens in, but the farm manager says that figure ignores fuel burned in transport and losses from spoiled deliveries. Winter electricity prices remain the main limit on expanding to feed the whole town.
