Reducing Cold Chain Energy Use with Modified Atmosphere Packaging for Kimchi Starters
dongascience.comResearchers at the World Institute of Kimchi have developed a modified atmosphere packaging (MAP) method that increases the stability of freeze dried starter cultures. By optimizing the gas mix to 28 percent carbon dioxide and 72 percent nitrogen, the half life of these cultures increased from 13.4 to 74.9 days. This advancement reduces the reliance on energy intensive refrigerated and frozen distribution. By lowering the need for constant cold chain logistics, the technology cuts production costs and decreases the overall carbon footprint of the fermented food industry.
