Hyundai Green Food has started offering low-carbon certified pork ham for institutional catering in South Korea, marking a first in the industry. The initial volume is 30 tons per year, about 10% of the company's total annual pork ham used in catering. The pork comes from farms certified by the Ministry of Agriculture, Food and Rural Affairs and the Korea Institute for Animal Products Quality Evaluation, which must cut greenhouse gas emissions by more than 10% compared to conventional pork production. Methods include using reduced-protein feed and converting livestock by-products into biogas. The company has run a Green Day program since 2021, serving low-carbon meals twice a month at about 600 of its 650 institutional catering sites. Starting this month, it will also offer low-carbon pork menu items once a month at those sites. Hyundai Green Food plans to gradually increase the volume as low-carbon pork production scales up and to develop more menu items. This is a concrete example of how food service companies can integrate certified low-carbon ingredients into their supply chains, though the initial volume is small at 30 tons per year.

Interesting move. 30 tons a year is tiny but it shows the supply chain for low-carbon pork is real enough to get a catering contract. Would like to know what the price premium looks like versus conventional ham.

The certification is from the Ministry of Agriculture and the Korea Institute for Animal Products Quality Evaluation. That is a government backed label. Still, the 10% threshold is the minimum. The real question is whether the program drives continuous improvement or just a one time check.

Biogas from livestock byproducts is a solid move. That cuts methane directly. The feed change is harder to verify without seeing the actual protein reduction. But if the farms are audited, this could be a decent model for other protein supply chains.

Not grid related but the biogas angle is interesting. If they are capturing methane from manure and using it for energy, that is a direct emission reduction. The feed change is more about embedded emissions. Would be useful to see a full lifecycle analysis.
