Higher atmospheric CO2 is changing the protein profile of wheat, according to a new study from the Leibniz Institute for Food Systems Biology at the Technical University of Munich. Researchers grew 10 winter wheat varieties under field conditions, with one group exposed to 546 ppm CO2. They found that elevated CO2 lowered gluten proteins and reduced baking quality, while raising some pest-defense proteins. The effects varied by wheat variety.
