How FoodOp uses AI and carbon budgets to cut kitchen admin and food costs
foodserviceequipmentjournal.comFoodOp, a Danish kitchen technology platform, now works with about 1,000 kitchens in the Nordics and UK. The company uses AI to pull together nutrition, allergen, and carbon data for contract caterers whose menus change daily. It also helps set carbon budgets alongside financial budgets, so operators can track sustainability targets without adding admin time for chefs. The platform connects supplier invoices, procurement data, and menu publishing in one system. FoodOp says customers can save 3-6% on food costs, which for a contract caterer can be the difference between profit and loss. The company is now expanding into stock management and food safety, with plans to add voice control for chefs working in multiple languages. For operators responding to tenders that require sustainability reporting, the tool offers a way to automate data collection and keep reporting consistent across sites. The bigger opportunity, according to CEO Nichlas Saul, is giving head chefs more time to cook and less time on spreadsheets.
